My typical Wednesday is a whirl wind — I wake up at 4:15am, leave the house at 5:15am to coach all day. I get home at 5pm and the last thing I want to do is exercise though I know this will make me feel so much better and less stressed! But it is already 5pm so if I workout I won’t have time to cook a nice dinner for my husband who has been on the road all week traveling for work unless we eat late and the only thing I want to do is GO TO BED!
So I pull together enough energy to prep a swift dinner, put on my tennis shoes as motivation and call a friend to meet me at the gym in 15 min.
So here was the dinner prep:
Early preparation makes last minute healthy choices so much easier! I knew I had fresh green beans already snipped and washed that could easily be steamed and I had chicken thawed as I had planned that part out last night.
- I preheated my oven to 275.
- Grabbed a cutting board, knife, and a sweet potato. I washed the sweet potato and cut in medium size chunks. Threw that into a pan with Italian seasoning, crack black pepper, and 1 tsp coconut oil. Shook it all up and threw into the oven.
- Grabbed the package of chicken and baking pan. Sprayed with pan with olive oil and laid the chicken in flat. I buy organic chicken breasts that do not have any fat on them which decreases my prep time as I do not have to chop off any fat. I sprinkled Thai Satay seasoning on the top and 1 T of a soy sauce substitute. Threw it into the oven.
- The bag of green beans I poked with a fork several times and put in the microwave (I would cooked these as I was serving the food onto plates when I returned from the gym).
Wrote a note to my husband to check the oven to make sure food was good when he got home and I would see him for dinner in an hour! Then out the door I ran.
I met Julie to power walk for an hour around the track and catch up. She is a busy working mom who tries to fit in exercise any way possible so she brought her daughter and strapped her on her front to power walk with us. It was a fun time catching up, regaining my energy from a long day, and burning some calories.
I walked into my house at 6:30pm, turned on the microwave, and put the proportions of food on the plates.
Ben and I enjoyed a home cooked meal after my workout. It was a long but overall successful day within health! So what is your quick prep dinner go-to?
