It is important to eat ALL different vegetables including ones you may not be a huge fan about. Surprisingly cauliflower is a vegetable that I am not a big fan of. I have never enjoyed the taste (yes, I do enjoy the taste of numerous vegetables!) and I think it smells. So when I think about preparing it I am not very excited. However, the other day in the grocery I thought I would take another stab at it.
Cauliflower is super healthy for us and we really should eat it regularly. It is an anti-inflammatory vegetable rich in cancer-fighting vitamins! It is pretty high in choline to aid in brain development…does this mean I will also improve my memory by eating it?!?! I sure do need that. In addition, cauliflower is rich in fiber and sulfur (two great detox properties). So get to the store to buy a head of cauliflower to try this breakfast idea.
First you want to rice your cauliflower. Once you get it all chopped up into rice size kernals, oatmeal can be extremely versatile. You can make cauliflower rice, cauliflower pizza crust, or even oatmeal all while using one head of cauliflower. So wash then chop the cauliflower into small chunks.
Then put the chunks in a blender or food processor. I prefer to use my vitamix since it can fit an entire cauliflower head in and make the necessary size in less than 10 seconds. I put the cauliflower chunks in then fill the container with water.
Pulse the blender on maximum three times. Then pour the mixture into a strainer.
You have to get all the excess moisture out or the cauliflower will not create the right texture. So squeeze and allow it to air for quite awhile. Once you have completed these steps you are ready to make your cauliflower creation!
Try this Cauliflower Oatmeal Recipe: I know it sounds unbelievable. But the truth is it didn’t taste like cauliflower and had the same texture as oatmeal. In fact, once we cook the cauliflower the smell disappears. So put 1/2 cup of cauliflower in 1 cup milk and bring to a boil.
I like my oatmeal pretty soupy, so if you like it thicker put less milk in. Once it comes to a boil turn the heat on low and allow the mixture to simmer for 5-7 minutes. Then turn the stove off and sitr in your toppings: fresh berries, cinnamon, honey, nuts, seeds. You name it and it can be added in.
