Sometimes in the evening I really want rice with my stir-fry! Stir fry is a quick and easy go-to for my family. However, the heavy carbs in the evening do not allow me to sleep well. So, I figured out a new approach that is the same texture as rice and a lot lower in carbohydrates which allows me to sleep soundly (for more tips on sleeping, be sure to check out this blog post). Try cauliflower rice as your stir-fry bed this week.
How to make cauliflower rice:
First, you want to rice your cauliflower. Once you get it all chopped up into rice size kernals, rice can be extremely versatile. You can make cauliflower rice, cauliflower pizza crust, or even oatmeal all while using one head of cauliflower. So wash then chop the cauliflower into small chunks.
Then put the chunks in a blender or food processor. I prefer to use my vitamix since it can fit an entire cauliflower head in and make the necessary size in less than 10 seconds. I put the cauliflower chunks in then fill the container with water.
Pulse the blender on maximum three times. Then pour the mixture into a strainer.
You have to get all the excess moisture out or the cauliflower will not create the right texture. So squeeze and allow it to air for quite awhile. Once you have completed these steps you are ready to cook it!
Place a large pot on the stove with 1T oil (preferably coconut) on medium heat. Add in the strained cauliflower and stir around for 10-15 min. You want the additional moisture to cook out. Then season to your taste buds desire. I love to add in fresh chopped garlic, Thai Satay seasoning, or even a soy-sauce substitute.
This recipe doesn’t work as a rice substitute for all recipes, but definitely works as anything calling for a bed of rice.
After I season it I take my proportion and put it on my plate, load sautéed vegetables on top, and an addition protein if desired.
