When I need a small but sweet meal, I grab dried fruit and nut butter. I love it as it provides a twist to the typical fresh fruit and nut butter! A fig with almond butter smeared on top provides a dessert like feel with a nutrient punch. Dates are delicious as well with peanut butter filled in the middle, however they are higher on the glycemic index so an insulin rise is more rapid. Figs are on the low end so an insulin rise is much more gradual…as long as we stick to proportion! 1 fig = 47 calories and 1 T nut butter is approximately 100 calories. In addition, we are using dried fruit the sugar is much more condensed. So keep this to a small meal.
A great crunch addition is to add coconut flakes to the top.
