So our good friends had their second baby, Stella, this past week! We were so excited to meet her we stopped to see the family in the hospital on Easter.
The delivery story was a wonderful and this precious little girl came into our lives for us to spoil!
Trying to get acclimated to home, the older brother adapting to being a sibling, and getting sleep occasionally, food is never much of a thought. So I typically offer to bring dinner–it is my way of inspiring health.
When I think about taking food to others, I always start with the vegetable and think how would they like it! For this family I made a salad, homemade baked beans, and a turkey burger bar so they can make their own burgers and eat it within their own…or should I say Stella’s schedule! And the absolute necessary thing is to put everything in disposable containers. The last thing on new parents’ minds is who does this container belong to and return it!

For these baked beans, I didn’t want to give anything that was two spicy. So I utilized 2 cups of northern beans (I ran out of pinto), juice of 1 lime , 2 chipotle peppers in the sauce, 2 table spoons maple syrup, 1/2 tsp. blackening spice, 1 cup low sodium chicken stock, 2 cloves minced fresh garlic, 1/2 diced small onion, and 2 T tomato paste. They have a smoky-sweet taste to them. Not anywhere close to traditional baked beans but full of flavor! Bake in a pot for an 1 hour then let cool and they will thicken.
