It is Mexican Night at the Gebhart’ House!

Mexican night or Tortilla Tuesday (as Keenan calls it) is one of the easiest go-to meals for me. It is quick, super healthy if you want it to be, and every family member gets to choose what they want in their meal. I lay out lots of diced veggies, salsa, guacamole, and plain Greek yogurt. Plain Greek yogurt is a substitute for sour cream so lower in fat and higher in protein! Salsa is additional veggies. Avocado in guacamole is a healthy unsaturated fat. I also have a bowl of spinach and tortillas or bean tortilla chips for the base of the plate. I then sauté up mushrooms and bell peppers for a little variety and either ground turkey or shredded chicken. Of course, I can’t forget the cheese for Ben!

Ben and Keenan dish their plates up either as a taco or nachos and I get to enjoy a big salad! Who can’t resist a fun Mexican meal. So when will you be serving Mexican for your family?
