Need something quick and easy?
Grab ½ pear , 1/4c. pecans, 1 tsp. cinnamon, and 2 T of honey. Mix the honey, pecans, and cinnamon.
Core a half a pear and place honey and pecans inside. Enjoy!
When I need a small but sweet meal, I grab dried fruit and nut butter. I love it as it provides a twist to the typical fresh fruit and nut butter! A fig with almond butter smeared on top provides a dessert like feel with a nutrient punch.
Sometimes in the evening I really want rice with my stir-fry! Stir fry is a quick and easy go-to for my family. However, the heavy carbs in the evening do not allow me to sleep well. So, I figured out a new approach that is the same texture as rice and a lot lower in carbohydrates which allows me to sleep soundly (for more tips on sleeping, be sure to check out this blog post). Try cauliflower rice as your stir-fry bed this week.
How to make cauliflower rice:
When it comes to the afternoon, we are tired and need a quick energy boost. This is the typical vending machine time! However, if we can create a mindless mini meal ready to grab we won't be searching for those quarters. So on a regular basis I will be posting easy mindless meals....notice I do not say snacks! Besides the downside of smelly breath, Garlic has great health benefits. It can be used in many ways, in multiple parts of our diets. For anyone who knows me, I waft with the smell of garlic whenever I am cooking! Fresh garlic has so much more flavor and health benefits than the jar garlic. Truly don't waste your time with a jar and grab a bulb. Below are just a few of the many great things about garlic and steps to utilize it (you won't regret grabbing it at the store this weekend!):
My typical Wednesday is a whirl wind -- I wake up at 4:15am, leave the house at 5:15am to coach all day. I get home at 5pm and the last thing I want to do is exercise though I know this will make me feel so much better and less stressed! But it is already 5pm so if I workout I won't have time to cook a nice dinner for my husband who has been on the road all week traveling for work unless we eat late and the only thing I want to do is GO TO BED!
So I pull together enough energy to prep a swift dinner, put on my tennis shoes as motivation and call a friend to meet me at the gym in 15 min.
